When we asked our three-year-old son what type of wine he wanted to make, he answered "orange wine"! And Evan's Amber wine was born.
Our now-nine-year-old has produced three vintages of amber wine to-date, taking estate-grown Sauvignon Blanc and fermenting it like a red wine (open-top fermentor, hand punchdowns, wild yeast, unfiltered). It's structured, complex and a little on the hazy side -- perfect for fried chicken, cheesy squash casserole or any foods with a little fat and richness.
