We discovered that one of our estate Pinot Noir clones, Pommard 05, loves new oak, so the 2007 Clone 05 Pinot Noir was aged in 50% new French oak barrels. We made four barrels of this clonal selection, produced with the same gentle methods as our other Pinot Noirs -- hand-harvested, 80% destemmed with 20% whole clusters, hand punchdowns, then fermented with wild yeast and wild ML cultures. No racking was done during aging and this wine was bottled unfined and unfiltered.
We love this limited-production Pinot Noir for its unique spot in our roster of Pinot Noirs -- it's bigger and bolder than our All-In or Zero New Oak, but not over the top. You'll taste the toasty oak and spice alongside pure cherry and raspberry fruit -- both signatures of our vineyard.
