With less than 3 acres of Semillon planted in the entire appellation, this wine is utterly unique. Sourced from our estate vineyard, where we have 0.3 acres, this wine is 100% Semillon. It's fermented with wild yeast in neutral oak, aged in a neutral oak barrel for eight months, then transferred to a new oak barrel for just a few months before bottling. Malolactic fermentation was only partial, creating a medley of tropical fruits and creme brulee.
